- 1 sheet puff pastry, thawed
- 4 slices ham
- 1 cup grated Gruyere or Swiss cheese
- 4 large eggs
- 1 egg for egg wash
- Fresh herbs for garnish
Instructions
- Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface and cut into 4 squares.
- Place pastry squares on a baking sheet lined with parchment paper. Prick with a fork to prevent puffing.
- Bake for 15-20 minutes until golden and flaky.
- Meanwhile, cook ham slices in a skillet until lightly browned. Set aside.
- In the last 5 minutes of baking, sprinkle cheese over the pastry and return to oven until cheese melts.
- In a skillet, fry eggs sunny side up, seasoning with salt and pepper.
- Remove pastry from oven, top each with a slice of ham, then place a fried egg on top.
- Garnish with fresh herbs and serve immediately.
