Instructions
- Grate the potatoes and squeeze out excess moisture using a clean towel.
- In a bowl, mix grated potatoes, chopped onions, eggs, flour, salt, and pepper until combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening slightly to form pancakes.
- Cook for 3-4 minutes on each side until golden brown and crispy.
- Drain on paper towels and serve hot with toppings of your choice.
