Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs and melted butter. Divide evenly into liners and press down to form crusts.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over crusts.
- Combine chopped apples, brown sugar, cinnamon, and butter in a skillet. Cook over medium heat until apples are tender and caramelized. Spoon over cheesecake batter.
