Instructions
- Boil potatoes until tender, then mash with butter, milk, garlic powder, salt, and pepper.
- Mix in shredded cheddar, Parmesan, and green onions until well combined.
- Shape the mashed potatoes into small balls or patties.
- Dredge each patty in flour, dip in beaten eggs, then coat with breadcrumbs.
- Heat oil in a deep fryer or large skillet over medium-high heat.
- Fry the puffs until golden brown and crispy, about 3-4 minutes per batch.
- Drain on paper towels and serve hot with dipping sauce.
