Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla, mixing well after each addition.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, mixing just until incorporated.
- Stir in chopped apples.
- In a small bowl, combine sugar and cinnamon for coating.
- Using a tablespoon, scoop dough and roll into balls, then coat in cinnamon sugar.
- Place on prepared baking sheets about 2 inches apart.
- Bake for 10-12 minutes until edges are golden brown.
- Allow cookies to cool on wire racks before serving.
