Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, then vanilla, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing just until incorporated.
  6. Stir in chopped apples.
  7. In a small bowl, combine sugar and cinnamon for coating.
  8. Using a tablespoon, scoop dough and roll into balls, then coat in cinnamon sugar.
  9. Place on prepared baking sheets about 2 inches apart.
  10. Bake for 10-12 minutes until edges are golden brown.
  11. Allow cookies to cool on wire racks before serving.
