Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate large bowl, beat butter and brown sugar until creamy. Add egg, apple cider, and vanilla extract, mixing well.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Scoop spoonfuls of dough onto prepared baking sheets, about 2 inches apart.
- Bake for 12-15 minutes or until edges are golden brown. Cool on wire racks.
- Once cooled, spread filling on one cookie and top with another to form a sandwich.
