- 1 1/2 cups grated carrots
- 1/2 cup crushed walnuts (optional)
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another large bowl, combine melted butter and sugar. Add eggs one at a time, mixing well. Incorporate vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated carrots and walnuts.
- Pour batter into prepared baking dish and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- While cake cools, beat together cream cheese, butter, powdered sugar, and vanilla for frosting.
- Spread frosting evenly over cooled cake. Slice into bars and serve.
Notes
- Use freshly grated carrots for the best texture.
- Walnuts add crunch but can be omitted for a nut-free version.
- Store bars in an airtight container refrigerated for up to 3 days.
