  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another large bowl, combine melted butter and sugar. Add eggs one at a time, mixing well. Incorporate vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated carrots and walnuts.
  5. Pour batter into prepared baking dish and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  6. While cake cools, beat together cream cheese, butter, powdered sugar, and vanilla for frosting.
  7. Spread frosting evenly over cooled cake. Slice into bars and serve.
