- 1 teaspoon baking powder

Instructions
- In a large bowl, combine the corn kernels, grated cheese, chopped chives (if using), salt, and pepper. Mix well to incorporate all ingredients.
- In a separate bowl, whisk together the eggs, milk, baking powder, and flour until smooth. Gradually pour into the corn mixture, stirring gently until the batter is thick and scoopable.
- Heat about 1 inch of oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C).
- Using a tablespoon or cookie scoop, carefully drop spoonfuls of batter into the hot oil. Do not overcrowd. Fry in batches for 3-4 minutes per side until golden brown and crispy.
- Remove the fritters with a slotted spoon and drain on paper towels. Serve immediately with your favorite dipping sauce or sour cream.
