Instructions

  1. In a large bowl, combine the corn kernels, grated cheese, chopped chives (if using), salt, and pepper. Mix well to incorporate all ingredients.
  2. In a separate bowl, whisk together the eggs, milk, baking powder, and flour until smooth. Gradually pour into the corn mixture, stirring gently until the batter is thick and scoopable.
  3. Heat about 1 inch of oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C).
  4. Using a tablespoon or cookie scoop, carefully drop spoonfuls of batter into the hot oil. Do not overcrowd. Fry in batches for 3-4 minutes per side until golden brown and crispy.
