Instructions
- Place beef chunks in the slow cooker.
- Add diced onion, garlic, curry powder, ginger, turmeric, salt, and pepper.
- Pour in coconut milk and add sliced vegetables.
- Cook on low for 6-8 hours until beef is tender.
- Garnish with fresh cilantro before serving.
