- 20 large pasta shells
- 1 pound mixed seafood (shrimp, scallops, crab)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta shells according to package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add seafood and cook until just tender. Remove from heat.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, heavy cream, lemon juice, salt, and pepper. Mix well.
- Fold the cooked seafood into the cheese mixture.
- Stuff each shell with the seafood and cheese filling, then place in a baking dish.
- Top with extra cheese if desired, cover with foil, and bake at 375°F (190°C) for 20 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add chopped spinach or herbs to the filling for extra flavor.
- Use fresh seafood for best results but frozen works well too.
- Serve with a side salad or garlic bread for a complete meal.
