  • 4 cups shredded rotisserie chicken

  • 1 cup chopped celery
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
  2. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and bring to a boil.
  4. Add carrots, celery, and thyme, then simmer for 10 minutes.
  5. Add shredded chicken and gnocchi, cook for 3-4 minutes until gnocchi float.
  6. Stir in heavy cream, season with salt and pepper, and heat through.
