- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups shredded rotisserie chicken
- 1 (20 oz) package potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
- Add garlic and cook for 1 minute more.
- Pour in chicken broth and bring to a boil.
- Add carrots, celery, and thyme, then simmer for 10 minutes.
- Add shredded chicken and gnocchi, cook for 3-4 minutes until gnocchi float.
- Stir in heavy cream, season with salt and pepper, and heat through.
Notes
- You can substitute shredded cooked turkey or chicken breast for rotisserie chicken.
- Feel free to add spinach or kale for extra greens.
