- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) pumpkin puree
- 1 cup beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 12 ounces pasta (your choice)
- Grated Parmesan cheese and chopped parsley for garnish
Instructions
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until fragrant.
- Add ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in pumpkin puree, beef broth, thyme, oregano, salt, and pepper. Simmer for 10-15 minutes to blend flavors.
- Serve the sauce over cooked pasta, garnished with Parmesan cheese and fresh parsley.
Notes
For a richer flavor, add a splash of red wine to the sauce. Adjust seasoning to taste, and substitute gluten-free pasta if needed.
