A rich, creamy potato soup made with fresh potatoes, onions, garlic, and blended to perfection, topped with bacon and chives.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)
  • Crispy bacon bits (optional)

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add diced potatoes and cook for 5 minutes, stirring occasionally.
  3. Pour in the broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Stir in heavy cream, season with salt and pepper, and cook for another 5 minutes.
  6. Serve hot, garnished with chopped chives and bacon bits if desired.

Notes

  • You can substitute heavy cream with coconut milk for a dairy-free version.
