- 1 lb Italian sausage links or ground sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped celery
- 2 cups chopped carrots
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Cook sausage until browned; remove and set aside.
- In the same pot, sauté onion, garlic, celery, and carrots until tender, about 5-7 minutes.
- Add cooked sausage back to the pot and stir to combine.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and Parmesan cheese, cook until heated through and slightly thickened.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
- You can substitute ground sausage with links sliced into rounds for a different texture.
- Adjust cream and Parmesan to taste for creaminess and flavor.
