- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 cup half-and-half or heavy cream
- 1 package gnocchi (about 16 oz)
- 2 cups fresh spinach, chopped
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
- Pour in chicken broth and bring to a boil.
- Add cooked shredded chicken and gnocchi; cook until gnocchi float, about 3-5 minutes.
- Reduce heat, stir in half-and-half, Parmesan cheese, and spinach.
- Simmer until heated through, season with salt and pepper.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
- You can substitute half-and-half with milk for a lighter version.
- For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon juice.
