- 1 lb Italian sausage, sliced
- 1 package gnocchi (16 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same pot, add diced onion and garlic, sauté until translucent.
- Pour in chicken broth and bring to a simmer. Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream and cooked sausage, simmer for another 5 minutes.
- Add chopped spinach and cook until wilted. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Use mild or spicy Italian sausage depending on your preference.
- Chopped kale can be a substitute for spinach.
- Serve with crusty bread for a complete meal.
