Ingredients

  • 1 package gnocchi (16 oz)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped

  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  2. In the same pot, add diced onion and garlic, sauté until translucent.
  3. Pour in chicken broth and bring to a simmer. Add gnocchi and cook until tender, about 3-4 minutes.
  4. Stir in heavy cream and cooked sausage, simmer for another 5 minutes.
  5. Add chopped spinach and cook until wilted. Season with salt and pepper.
  6. Garnish with fresh parsley before serving.
