- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Cooked mashed potatoes (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
- Remove shrimp and set aside.
- In the same skillet, stir in butter and heavy cream. Bring to a simmer.
- Cook sauce until slightly thickened, about 3 minutes.
- Return shrimp to skillet, toss to coat with sauce, and heat through.
- Serve the garlic shrimp over a bed of mashed potatoes, garnished with chopped parsley.
