Ingredients

- 2 chicken breasts, cooked and shredded
- 4 cups fresh corn kernels or frozen
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Place all ingredients except cream and parsley into the crockpot.
- Cook on LOW for 6 hours or HIGH for 3 hours.
- Stir in heavy cream during the last 30 minutes of cooking.
- Serve hot, garnished with chopped parsley.
Notes
- Use fresh corn for the best flavor, or frozen if out of season.
- Shredded cooked chicken can be replaced with rotisserie chicken for convenience.
