- 2 lbs chicken breasts, diced
- 4 cups fresh corn kernels or frozen
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 cups heavy cream
- 2 tbsp butter
- 1 cup diced potatoes (optional)
- Salt and pepper to taste
- Chopped parsley or chives for garnish
Instructions
- Place diced chicken, corn, onion, garlic, potatoes (if using), salt, and pepper into the slow cooker.
- Pour in chicken broth and add butter. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Stir in heavy cream and cook for an additional 30 minutes until heated through.
- Garnish with chopped parsley or chives before serving.
Notes
For a thicker soup, mash some of the corn or blend a portion of the chowder before serving. Feel free to add diced bell peppers for extra flavor.
