- 1 pound ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until softened.
- Stir in chili powder, cumin, salt, and pepper. Cook for 1 minute.
- Add beef broth, diced tomatoes, kidney beans, and corn. Bring to a boil.
- Reduce heat and simmer for 20 minutes to blend flavors.
- Stir in heavy cream and cook for another 5 minutes until heated through.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute ground beef with ground turkey for a lighter option.
- Adjust spice levels to your preference by adding more chili powder or cayenne pepper.
