- 4 slices bacon, chopped
- 1 lb shredded cooked chicken
- 1 package (16 oz) gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook bacon in a large pot until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic in olive oil until translucent.
- Add chicken broth and bring to a simmer.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Add heavy cream, cooked chicken, and bacon; heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
- You can substitute cooked turkey for chicken for a different flavor.
- For a thicker soup, add a slurry of flour and cold water before the heavy cream.
