- 2 lbs boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 3 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Place chicken breasts into the slow cooker. Add diced onion, garlic, thyme, paprika, salt, and pepper.
- Pour in chicken broth and cover. Cook on low for 6 hours or high for 3 hours.
- Add rice and heavy cream, stir well, and cook uncovered on high for an additional 30 minutes or until rice is tender and creamy.
- Garnish with chopped parsley before serving.
li>Remove the chicken, shred with two forks, and return to the slow cooker.
Notes
- For extra flavor, add a splash of white wine or a handful of shredded cheese on top before serving.
