- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1/4 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper, then cook until golden brown on both sides. Remove and set aside.
- In the same skillet, sauté onion and garlic until fragrant and translucent.
- Whisk in flour and cook for 1 minute to thicken.
- Gradually add chicken broth, whisking constantly to prevent lumps.
- Bring to a simmer, then return chicken to the skillet. Cover and cook for 10-15 minutes until chicken is cooked through.
- Stir in heavy cream, adjust seasoning, and garnish with thyme before serving.
Notes
- Serves best with mashed potatoes or steamed vegetables.
- Thickens further upon resting; add more broth if needed.
