- 2 pounds potatoes, diced
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 tablespoons olive oil

Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 30-35 minutes until golden and crispy.
- While potatoes roast, cook sliced smoked sausage in a skillet over medium heat until browned and cooked through.
- In a large bowl, combine roasted potatoes, cooked sausage, ranch dressing, and half of the shredded cheese.
- Transfer mixture to a baking dish, top with remaining cheese, and bake for 10 minutes until bubbly and melted.
- Garnish with fresh parsley before serving.
