- 4 large russet potatoes, diced
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread potatoes evenly on the baking sheet and roast for 25-30 minutes until crispy.
- Meanwhile, cook smoked sausage slices in a skillet until browned.
- Once potatoes are roasted, sprinkle cheese over them and return to oven for 5 minutes until melted.
- Remove from oven, drizzle with ranch dressing, and top with cooked sausage slices and fresh parsley.
- Serve hot with extra ranch on the side.
Notes
- You can substitute fresh herbs for the parsley for additional flavor.
- For a spicier kick, add chopped jalapenos or hot sauce.
