- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup cooked white rice
- 1 cup shredded Cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). In a skillet, cook ground beef, diced onion, and minced garlic over medium heat until beef is browned and onion is tender.
- Drain excess fat and stir in diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
- In a mixing bowl, combine cooked rice, sour cream, and half of the shredded cheese.
- Transfer beef mixture to a greased baking dish, spread evenly.
- Spoon the rice mixture over the beef and spread gently.
- Sprinkle remaining cheese on top. Bake for 20-25 minutes until cheese is bubbly and golden.
- Garnish with chopped parsley before serving.

- You can substitute ground turkey or chicken for a leaner option.
- For a spicier kick, add hot sauce or cayenne pepper.
