  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup cooked white rice
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, cook ground beef, diced onion, and minced garlic over medium heat until beef is browned and onion is tender.
  2. Drain excess fat and stir in diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  3. In a mixing bowl, combine cooked rice, sour cream, and half of the shredded cheese.
  4. Transfer beef mixture to a greased baking dish, spread evenly.
  5. Spoon the rice mixture over the beef and spread gently.
  6. Sprinkle remaining cheese on top. Bake for 20-25 minutes until cheese is bubbly and golden.
  7. Garnish with chopped parsley before serving.
