- 1 cup diced tomatoes
- 4 cups beef or chicken broth
- 1 cup shredded cheddar cheese
- 1 cup milk or heavy cream

- Salt and pepper to taste
- Chopped green onions and bacon bits for garnish
Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic; cook until tender.
- Stir in diced tomatoes and cook for 2 minutes.
- Pour in broth and bring to a simmer.
- Optionally, whisk flour with a little water and add to thicken the soup, stirring constantly.
- Reduce heat and stir in shredded cheese and milk or cream until smooth and creamy.
- Season with salt and pepper.
- Ladle into bowls and garnish with green onions and bacon bits.
