- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup grated carrots
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup powdered sugar
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in grated carrots, cinnamon, nutmeg, and vanilla.
- Pour batter over the crust, bake for 50-60 minutes until set. Cool completely.
- Mix sour cream with powdered sugar for the topping. Spread over cooled cheesecake.
- Optional: Garnish with chopped pecans and additional carrots before serving.

- Use fresh grated carrots for the best flavor.
- Chill the cheesecake for at least 4 hours for optimal texture.
