Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped chicken and cook until browned.
- Stir in diced onion and bell pepper; cook until softened.
- Add garlic, Cajun seasoning, smoked paprika, and cayenne; cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Reduce heat and stir in heavy cream; cook until heated through.
- Season with salt and pepper as needed and serve hot.
