- 1 pound butternut squash, roasted and mashed

Instructions
- Preheat oven to 400°F. Roast butternut squash until soft, then mash and set aside.
- Mix mashed squash, egg, salt, pepper, and gradually add flour until a soft dough forms.
- Divide dough into portions and roll into long ropes, cut into 1-inch pieces to form gnocchi.
- Cook gnocchi in boiling salted water until they float, then drain.
- In a skillet, heat olive oil and cook sausage slices until browned and cooked through.
- Add boiled gnocchi to the skillet and sauté with sausage, then serve topped with parmesan and herbs.
