- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped chives or green onions for garnish
Instructions
- In a large pot, cook chopped bacon over medium heat until crispy. Remove bacon and set aside.
- In the same pot, sauté diced onion and garlic until translucent.
- Add chicken broth and bring to a boil. Stir in gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Return crispy bacon to the soup. Season with salt and pepper as needed.
- Serve hot, garnished with chopped chives or green onions.
Notes
- For extra flavor, sprinkle additional cheddar or shredded cheese before serving.
- You can substitute turkey bacon for a leaner option.
