- 1 lb Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (9 oz) package tortellini
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley and grated Parmesan for garnish
Instructions
- Cook sausage in a large pot over medium heat until browned, then remove and set aside.
- Sauté onions and garlic in the same pot until translucent.
- Add carrots, celery, Italian seasoning, salt, and pepper; cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add tortellini and cooked sausage; reduce heat and simmer until tortellini are tender (about 8 minutes).
- Garnish with fresh parsley and Parmesan before serving.

- Use spicy sausage for a kick of heat.
- Frozen tortellini can be used for quicker preparation.
- Make it dairy-free by skipping Parmesan cheese.
