Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat together butter and brown sugar until creamy. Add maple syrup, egg, and vanilla; mix well.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing until combined.
- Drop spoonfuls of dough onto prepared baking sheets, spacing evenly. Bake for 10-12 minutes or until edges are golden.
- Remove from oven and let cookies cool slightly on a wire rack.
- While cookies are still warm, dip the bottoms or tops into melted white chocolate. Place on parchment to set. Decorate with sprinkles if desired.
