- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) red enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3 minutes.
- Add ground beef and cook until browned, about 5 minutes. Stir in minced garlic, salt, and pepper. Cook for 1 more minute.
- Pour in the enchilada sauce and simmer for 5 minutes.
- Spread a thin layer of sauce in a 9×13 inch baking dish.
- Spoon beef mixture onto each tortilla, roll up, and place seam-side down in the dish.
- Pour remaining sauce over the top and sprinkle with shredded cheeses.
- Bake uncovered for 20 minutes until bubbly and cheese is melted.
- Garnish with chopped cilantro before serving.
Notes
- Feel free to add chopped jalapenos for extra spice.
- Replace beef with ground turkey for a leaner option.
- Serve with sour cream and sliced jalapenos for added flavor.
