- 4 large russet potatoes, thinly sliced
- 2 large onions, caramelized
- 1 cup shredded Gruyere cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, heat olive oil and butter over medium heat. Add onions, thyme, salt, and pepper. Cook until caramelized, about 20 minutes.
- Layer sliced potatoes in the baking dish. Spread caramelized onions over the potatoes.
- Sprinkle shredded Gruyere and Parmesan cheese evenly on top.
- Cover with foil and bake for 40 minutes. Remove foil and bake an additional 10 minutes until golden brown.
- Garnish with fresh herbs before serving.
Notes
- For extra flavor, add a splash of white wine to caramelize the onions.
- Use sharp cheddar if Gruyere is unavailable.
