Instructions
- Start by cooking the bacon until crispy and setting it aside on paper towels to drain excess grease.
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Prepare any optional toppings.
- Heat a skillet over medium heat and melt the butter. Pour in the egg mixture and cook, stirring gently, until just set but still soft. Remove from heat.
- Lay two slices of bread on a clean surface. Layer each with diced bacon, scrambled eggs, and shredded cheese. Top with remaining bread slices.
- Heat a skillet or griddle over medium heat. Carefully place the assembled sandwiches and cook until the bread is golden brown and cheese melts, about 3-4 minutes per side. Press lightly with a spatula for an even melt.
- Remove from heat, cut in half if desired, and serve immediately with optional sides or toppings.
Notes
