  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ½ teaspoon salt
  • ¾ cup unsalted butter, cold and cubed
  • 1 cup granulated sugar
  • 3 large eggs
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons lemon zest
  • ¼ cup all-purpose flour
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups of flour, powdered sugar, and salt. Add the cold, cubed butter and mix with a pastry cutter or fingertips until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13-inch baking dish. Bake for 15-20 minutes until lightly golden.
  2. While the crust is baking, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and ¼ cup of flour until smooth. Once the crust is baked, pour the lemon filling over the hot crust, spreading evenly. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly puffed.
  3. Allow the lemon bars to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar if desired, then cut into squares. For cleaner cuts, wipe your knife between slices.
