- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ teaspoon salt
- ¾ cup unsalted butter, cold and cubed
- 1 cup granulated sugar
- 3 large eggs
- ¼ cup fresh lemon juice (about 2 lemons)
- 2 tablespoons lemon zest
- ¼ cup all-purpose flour
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups of flour, powdered sugar, and salt. Add the cold, cubed butter and mix with a pastry cutter or fingertips until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of a greased 9×13-inch baking dish. Bake for 15-20 minutes until lightly golden.
- While the crust is baking, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and ¼ cup of flour until smooth. Once the crust is baked, pour the lemon filling over the hot crust, spreading evenly. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly puffed.
- Allow the lemon bars to cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar if desired, then cut into squares. For cleaner cuts, wipe your knife between slices.
Notes
- Store in an airtight container in the refrigerator for up to 4 days.
- For longer storage, freeze individual bars wrapped tightly in plastic wrap and in a freezer bag for up to 2 months.
- Chilling enhances the bright lemon flavors and texture.
