Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
- In a mixing bowl, combine flour, baking powder, and salt. In a separate bowl, whisk together melted butter, sugar, eggs, lemon zest, and vanilla.
- Gradually add the dry ingredients to the wet mixture until just combined. Press this dough evenly into the prepared pan to form the crust.
- Bake for 12-15 minutes or until lightly golden.
- While the crust is baking, whisk together the lemon juice, eggs, sugar, and flour until smooth.
- Once the crust is out and slightly cooled, pour the lemon filling over it.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set but still slightly wobbly in the center.
- Allow to cool completely before slicing and dusting with powdered sugar. Serve fresh or store for later enjoyment.
