- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together melted butter, sour cream, eggs, and vanilla.
- Gradually mix the wet ingredients into the dry until just combined.
- In a smaller bowl, blend softened cream cheese with powdered sugar (if using).
- Pour half of the batter into the loaf pan, spread cream cheese mixture over it, then layer with remaining batter.
- Gently fold blueberries into the batter.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
- Use fresh blueberries for the best flavor and appearance.
- If desired, dust with powdered sugar before serving.
