Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together melted butter, sour cream, eggs, and vanilla.
  4. Gradually mix the wet ingredients into the dry until just combined.
  5. In a smaller bowl, blend softened cream cheese with powdered sugar (if using).
  6. Pour half of the batter into the loaf pan, spread cream cheese mixture over it, then layer with remaining batter.
  7. Gently fold blueberries into the batter.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before slicing and serving.

  • If desired, dust with powdered sugar before serving.
